As part of the “Market Makers” Summer Tasting Series we sit down for a Texas Size tasting of an Austin original… Still Austin Whisky Co.. In this episode we put both their Bourbon Whiskey and Gin to the test, so make sure to watch to see if they earned our stamp of approval… trust me, you’ll be glad you did!
High Rye Bourbon Whiskey: Starts off with hand-selected white corn, Elbon rye, and “wildfire” malted barley. Then Still Austin puts the humidity and rapidly shifting temperatures of Central Texas to work, coaxing flavors from the charred oak barrels inside their rickhouse.
- On the Nose: sweet sugary caramel, vanilla, hints of baking spices.
- The Taste: Rye spice is front & center, followed by the caramel and corn notes.
Still Austin Gin: Uniquely crafted from a base of Texas Rye grains, which they mill and distill, in a process that moves through two separate stills. The result is a well balanced gin, made in small batches with real botanicals like juniper, coriander seeds, cinnamon, citrus peels, elderflower and allspice. Personally, I’ve never been a big fan of gin, but this one from Still Austin won me over!
- On the Nose: A botanical bomb with citrus, lemon, juniper, and floral elderflower notes.
- The Taste: Well balanced with hints of the rye base within the boldness of the botanicals. Those botanicals and citrus flavors kick things off, before the spices, cinnamon, and allspice show up for a pleasantly long and warm finish.
